Modular Interchangeability & Kitchen Workflow

The Gastronorm system was established in Switzerland in 1964 and formalized internationally as EN 631 to eliminate equipment mismatch across professional kitchen manufacturers:

  • Fractional Nesting: Any combination of smaller fractional pans fits seamlessly into larger equipment wells. For example, two GN 1/2 pans, three GN 1/3 pans, or one GN 1/2 plus three GN 1/6 pans fill a standard GN 1/1 steam table well.
  • Direct Transfer Workflow: A single GN pan moves from walk-in cold storage (-20°C) to combi ovens (+250°C), blast chillers, buffet bain-maries, and transport insulated cambros without transferring food between containers.
  • US Steam Table Pans vs Gastronorm: US standard hotel pans measure 12 × 20 inches (305 × 508 mm), which is approximately 20 mm narrower and 22 mm shorter than European GN 1/1 (325 × 530 mm). Equipment designed for US hotel pans cannot accept European Gastronorm pans without jamming.
